🥑 Workout Egg Avocado Salad

Ingredients
  

  • 6 eggs
  • 2 avocados
  • 1 cup cherry tomatoes
  • 1 cucumber
  • 1/4 red onion
  • 2 tbsp fresh parsley or cilantro
  • 2 cups lettuce or spinach
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • Salt
  • Black pepper

Equipment

  • Pot
  • Knife
  • Cutting board
  • Mixing bowl

Method
 

  1. Boil eggs for 9–10 minutes, then cool and peel.
  2. Chop eggs into pieces.
  3. Slice tomatoes and dice cucumber and onion.
  4. Chop herbs.
  5. Cut avocados into cubes.
  6. Combine all ingredients in a bowl.
  7. Add olive oil, lemon juice, salt, and pepper.
  8. Toss gently and serve.

Notes

Use ripe avocados for best texture.
Add lemon juice to prevent browning.
Great for meal prep but best eaten fresh.
