Cava Honey Harissa Chicken Bowls

Ingredients
  

  • 1.5 lbs chicken thighs
  • 2 tbsp olive oil
  • 2 tbsp harissa paste
  • 1 tbsp honey
  • 1 tbsp lemon juice
  • 2 garlic cloves minced
  • Salt and pepper
  • 2 cups cooked rice
  • 1 avocado sliced
  • 1/2 cup feta cheese
  • 1/2 cup cucumbers
  • 1/2 cup tomatoes
  • 1/4 cup hummus

Equipment

  • Large skillet
  • Mixing bowl
  • Knife
  • Cutting board

Method
 

  1. Marinate chicken with olive oil, harissa, honey, lemon juice, garlic, salt, and pepper.
  2. Let sit for at least 30 minutes.
  3. Cook chicken in a hot skillet until fully cooked.
  4. Let rest and slice.
  5. Prepare rice and toppings.
  6. Assemble bowls with rice, chicken, and toppings.
  7. Drizzle with sauce and serve.

Notes

Adjust spice level by reducing or increasing harissa.
Great for meal prep.
Can substitute chicken with tofu or chickpeas.
