Chocolate Chip Banana Bread

Ingredients
  

  • 1 1/2 cups mashed ripe bananas about 3–4 medium bananas, measured
  • 1/2 cup light brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup Greek yogurt
  • 1 1/3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 3/4 cup mini chocolate chips
  • Extra chocolate chips for topping

Method
 

  1. Preheat oven to 325°F and line a 9×5 loaf pan with parchment paper.
  2. In a bowl, whisk together flour, baking soda, and salt.
  3. In a large bowl, whisk melted butter with both sugars until thick and glossy.
  4. Add mashed bananas, eggs, Greek yogurt, and vanilla extract. Mix until smooth.
  5. Gently fold dry ingredients into wet mixture just until combined.
  6. Fold in chocolate chips.
  7. Pour batter into prepared loaf pan and sprinkle extra chocolate chips on top.
  8. Bake for 60–75 minutes or until a toothpick inserted in the center comes out with moist crumbs.
  9. Cool completely before slicing and serving.

Notes

Use very ripe bananas for best flavor. Do not overmix the batter to keep the bread tender. Store at room temperature for up to 3 days or freeze slices for up to 2 months.
