Easy Chuck Roast Tacos

Ingredients
  

  • 2 –3 lbs chuck roast
  • 1 tbsp olive oil
  • 1 large onion sliced
  • 4 cloves garlic minced
  • 1 cup beef broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1/2 tsp oregano
  • Salt and pepper to taste
  • Juice of 1 lime
  • Tortillas
  • Optional toppings: cilantro onions, cheese, salsa, sour cream

Equipment

  • Slow cooker
  • Large skillet
  • Cutting board
  • Forks

Method
 

  1. Heat olive oil in a skillet and sear the chuck roast on all sides until browned.
  2. Transfer the roast to a slow cooker.
  3. Add onion, garlic, broth, and all spices.
  4. Cover and cook on low for 7–8 hours until tender.
  5. Remove the beef and shred it using two forks.
  6. Return shredded meat to the juices and mix well.
  7. Add lime juice and stir.
  8. Warm tortillas and fill with the shredded beef.
  9. Add toppings and serve immediately.

Notes

Searing the meat adds extra flavor. Cook low and slow for the most tender result. Add broth when reheating to keep the meat juicy.
