- Heat olive oil in a skillet and sear the chuck roast on all sides until browned.
- Transfer the roast to a slow cooker.
- Add onion, garlic, broth, and all spices.
- Cover and cook on low for 7–8 hours until tender.
- Remove the beef and shred it using two forks.
- Return shredded meat to the juices and mix well.
- Add lime juice and stir.
- Warm tortillas and fill with the shredded beef.
- Add toppings and serve immediately.
Notes
Searing the meat adds extra flavor. Cook low and slow for the most tender result. Add broth when reheating to keep the meat juicy.
