- In a bowl whisk together olive oil, lemon juice, lemon zest, honey, garlic powder, oregano, basil, salt, pepper, and red pepper flakes.
- Pound the chicken breasts to even thickness and coat them in the marinade. Marinate for at least 30 minutes.
- In another bowl mix Greek yogurt, grated cucumber, lemon juice, olive oil, garlic, salt, and dill to make the tzatziki sauce. Refrigerate until ready to use.
- Cook rice or quinoa according to package instructions and prepare all vegetables.
- Cook the marinated chicken in an air fryer at 380°F for about 10 minutes or in a skillet until cooked through and golden.
- Let the chicken rest for a few minutes, then slice into strips.
- Assemble the bowls by adding rice or quinoa first, then vegetables, sliced chicken, feta cheese, and a generous spoonful of tzatziki sauce.
