Loaded Potato Taco Bowl

Ingredients
  

  • 4 russet potatoes diced
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • Salt and pepper
  • 1 lb ground beef or turkey
  • 1 tsp chili powder
  • 1 tsp cumin
  • 1 small red onion chopped
  • 1 can black beans drained
  • 1 cup corn
  • 1 cup shredded cheddar cheese
  • 1 cup cherry tomatoes
  • 1 avocado diced
  • Fresh cilantro
  • Sour cream
  • Lime wedges

Equipment

  • Baking sheet
  • Skillet
  • Mixing bowl
  • Spatula

Method
 

  1. Preheat oven to 425°F and spread potatoes on a baking sheet. Toss with oil and spices.
  2. Roast for 30–35 minutes, flipping halfway until crispy.
  3. Cook ground beef in a skillet until browned.
  4. Add onion and spices, cook 5 minutes.
  5. Stir in beans and corn, cook until heated through.
  6. Divide potatoes into bowls and top with meat mixture.
  7. Add cheese and let melt.
  8. Finish with toppings and serve immediately.

Notes

Store components separately for up to 4 days. Reheat potatoes in oven for best texture. Customize toppings to your taste.
