Loaded Potato Taco Bowl

Ingredients
  

  • 2 pounds potatoes
  • 2 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • Salt
  • Black pepper
  • 1 pound ground beef
  • 1 tbsp olive oil
  • 2 tbsp taco seasoning
  • 1/2 cup tomato sauce
  • 1/4 cup water
  • 1 cup shredded cheese
  • 1 cup lettuce
  • 1 cup tomatoes
  • 1 avocado
  • 1/2 cup sour cream
  • Cilantro
  • Green onions

Equipment

  • Oven
  • Baking sheet
  • Skillet
  • Knife
  • Mixing bowl

Method
 

  1. Preheat oven to 220°C.
  2. Toss potatoes with oil and spices.
  3. Roast 25–30 minutes until crispy.
  4. Cook beef in skillet until browned.
  5. Add seasoning, tomato sauce, and water.
  6. Simmer until thick.
  7. Assemble bowls with potatoes and meat.
  8. Add toppings and serve immediately.

Notes

Spread potatoes well for crispiness.
Reheat potatoes in oven, not microwave.
Add toppings just before serving.
