Sausage and Potato Breakfast Bowls

Ingredients
  

  • 1 lb breakfast sausage
  • 4 medium potatoes diced
  • 8 eggs
  • 1/4 cup milk
  • 1 cup shredded cheddar cheese
  • 1/4 cup green onions
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • Optional: avocado hot sauce, sour cream

Equipment

  • Large skillet
  • Mixing bowl
  • Spatula
  • Knife and cutting board

Method
 

  1. Cook sausage in a skillet over medium heat until browned. Remove and set aside.
  2. In the same skillet, add olive oil and cook diced potatoes until golden and crispy.
  3. In a bowl, whisk eggs, milk, salt, and pepper.
  4. Scramble eggs in the skillet until soft and fluffy.
  5. Assemble bowls with potatoes and sausage as base.
  6. Add scrambled eggs on top.
  7. Sprinkle with cheese and green onions.
  8. Serve immediately.

Notes

Use turkey sausage for a lighter option.
Add vegetables like bell peppers or mushrooms.
For meal prep, store ingredients separately.
