Cherry Breakfast Bars

Ingredients
  

  • 1 ½ cups rolled oats
  • ½ cup all-purpose flour
  • ½ cup brown sugar
  • cup chopped almonds
  • ¼ teaspoon baking soda
  • ¼ teaspoon salt
  • cup coconut oil melted
  • 2 ½ cups sweet cherries pitted and chopped
  • 2 tablespoons lemon juice
  • 1 tablespoon maple syrup
  • 1 tablespoon cornstarch

  • - Mixing bowls
  • Wooden spoon or spatula
  • Measuring cups and spoons
  • Parchment paper
  • Cherry pitter
  • Cooling rack

Method
 

  1. Preheat the oven to 350°F and line an 8-inch baking dish with parchment paper.
  2. In a large bowl mix rolled oats flour brown sugar almonds baking soda and salt.
  3. Pour melted coconut oil over the mixture and stir until evenly coated.
  4. In another bowl combine chopped cherries lemon juice maple syrup and cornstarch.
  5. Reserve about one cup of the oat mixture for the topping.
  6. Press the remaining mixture firmly into the bottom of the baking dish.
  7. Spread the cherry filling evenly over the crust.
  8. Sprinkle the reserved crumble mixture on top.
  9. Bake for about 30 minutes until the top is golden brown.
  10. Let the bars cool completely before slicing and serving.

Notes

Allow bars to cool fully before slicing to keep clean edges.
If using frozen cherries thaw and drain them well.
Press the crust firmly into the pan for a stable base.
